This Micro Training course has been designed to give quality assurance and production professionals a detailed understanding of microbes affecting our food, how they grow and how to test for and analyse the results.

These are main areas which we cover off in our food microbiology course

  1. Food bourne disease – Bacteria, Viruses, Moulds and Fungi and Protozoa
  2. Growth requirements, Environmental conditions and control of food microbes
  3. Factors of food spoilage
  4. Processes to control food microbes
  5. Fermentation
  6. Environmental monitoring, including using a home kit to grow your own bacteria
  7. Interpreting test reports
  8. ATP and protein swabbing
  9. How to set up proficiency testing program (requirement of SQF)

What will I learn?

We will explain how different microbes affect food, their growth factors and how to control for them.

We give an introduction to fermentation and how this is used to produce a wide range of food, including kombucha and chocolate.

We work through how to design and write up an environmental testing program and how this can be used to validate a cleaning program

We show you how to develop a proficiency program for environmental testing and other microbial sampling and testing of raw materials, Work in progress and finished products

We show you how to interpret microbial results, how to investigate further and identify correct actions.

What is an Environmental Testing Program

An environmental testing program is a schedule of microbial testing of the general environment of where food is being produced.

It may include the microbial swabbing of a series of common contact points of staff or food or packaging. (For example door handles, hand washing taps as well as conveyors).
